At home, they often joke at my expense that we have an irrigation system in the kitchen. Dates, lentils, chickpeas, nuts … Certain foods require soaking before use either for health effects or to easen further processing. This is the case, for example, with dates, which are easier to grind into a paste when soaked. I like to use them to make fresh balls, such as pistachio bites with sesame.
The recipe is gluten free, without added sugar and vegan. They can be eaten for breakfast (twice) or a snack during the day (four times).
1. Soak the dates in water overnight.
2. Blend the dates into the paste.
3. Grind the pistachios into flour and add the date paste to the blender.
4. Blend into an even mixture, form into balls and roll in sesame seeds.
– The step of soaking dates can be omitted; however, it will ease blending.
